So if you are like me you're are excited when the holiday flavors for starbucks coffee come out. Half fat egg nog latte please!! Others look forward to their special baked goods this time of year, here is a "copycat" recipe to those Cranberry bliss bars that so many people like...so make these at home:
Cranberry Bliss Bars (similar to Starbucks)
Yields about 40 bars
1 c. butter
1c. brown sugar
1/3 c. granulated sugar
3 large eggs
2 teaspoons orange extract (or vanilla if desired)
2 c. flour
1 ½ teaspoons baking powder
1 teaspoon ground ginger
¾ c. craisins
¾ c. white chocolate chips
frosting
3 oz cream cheese (softened)
2 tablespoons butter
3 c. powdered sugar
1 teaspoon orange or vanilla extract
topping
1/3 c. craisins
1-2 tablespoons grated orange rind (optional)
1/3 c/ white chocolate chips
½ teaspoon canola oil
method
Preheat oven to 350, spray or grease a 10 by 15 pan (or 9 by 13), cream together butter and sugars and then add eggs, do not over beat eggs, add in flour, baking powder, and ginger, stir in cranberries & white choc chips, place batter in pan and bake 20-24 min until lightly browned on edge (26-28 min in 9 by 13), frosting: blend cream cheese & butter and add in extract mix until fluffy & spreadable (if needed may add a teaspoon of milk), spread evenly over COOLED bars, topping: rough chop craisins and zest orange, heat oil & white choc in glass measuring cup and melt stirring every 15 sec, drizzle over frosted bars ad sprinkle toppings, wait 1 hour to set up before cutting.
