Want to try something a little diffrent this year? This wild rice dressing is savory and delicious.
Try this at home:
Wild Rice Dressing with Pine Nuts

Yields 6 servings

¼ c olive oil
1 ½ t cumin
1 large onion chopped
6 cloves garlic minced
...
1 T tomato paste
2 T fresh thyme chopped
1 ¼ t fresh ground pepper
1 ¼ t coarse kosher salt
½ t dried mint
1 c wild rice
2 ¾ c low sodium chicken broth or stock
1 c long grain white rice
1 ½ T fresh lemon juice
½ c minced fresh Italian parsley
1/3 c toasted pine nuts

method
Heat oil in large pot over med add cumin, stir for 15 sec, add onion and garlic sauté until tender, stir in tomato paste, thyme, salt, pepper and mint, add rice and stir for about 2 min, then add broth and wild rice then reduce heat to med-low, cover and simmer for about 40 min until wild rice is tender, add in white rice and cook another 20 min with lid on, rice should be tender stir in lemon juice cover and simmer until all liquid is absorbed and all rice is tender (about 5 min), remove from heat and stir in parsley and pine nuts.

This is a great substitute for a plain bread stuffing!
